- 1 tablespoon olive oil
- 1 small onion finely chopped
- 500g potatoes peeled and chopped
- 5 cups chicken stock
- 1 cup frozen peas
- 1 2 barbecued chicken
- 2 zucchinis chopped
- parsley leaves to serve
- 150g ciabatta bread sliced half loaf
- 2 cloves garlic halved
- 2 tablespoons extra virgin olive oil

- heat oil in large saucepan add onion and cook for 5 mins over medium heat until soft add potatoes and stock to pan cover and bring to boil then reduce the heat slightly and cook with lid tilted a tiny bit for 15 mins until the potato is tender
- meanwhile pull meat from the chicken and finely shred add zucchini to soup and cook for 5 mins until tender add peas and shredded chicken and cook for 5 mins to heat through
- garlic toasts toast ciabatta slices and rub one side of each slice with cut garlic cloves drizzle slices with extra virgin olive oil ladle soup into serving bowls and top each with a few parsley leaves serve accompanied with toasts
