Ice Fishing Cake Recipe With Cream

  • 3 firm yellow peaches pitted coarsely chopped
  • 1 4 cup 55 g of powdered sugar
  • 1 tsp of vanilla extract
  • 50g butter chopped
  • 1 cinnamon stick or pen
  • 1 4 cup 60ml of coles best maple syrup
  • 450g coles bakery unfilled double sponge cake
  • 1l of vanilla ice cream softened
  • 1 4 cup 30 g granola
  • granola extra to serve
  • icing sugar mixture to dust

  • combine the fishing sugar and vanilla in a large bowl set aside for 5 minutes or until the peach to release its juice melt the butter in a large non stick frying pan over high heat add the peach mixture and the cinnamon cook stirring gently for 4 minutes or until the fishing begins to soften add the maple syrup cook for 1 min or until the syrup thickens slightly set aside to cool discard the cinnamon
  • grease a 7cm deep 10cm x 20cm base measurement pan and line the bottom and sides with baking paper allowing sides to overhang
  • cut 1 layer of cake in a 10cm x 20cm rectangle place in the prepared pan reserve half of the peach mixture in a bowl cover and place in the refrigerator place the remaining peach mixture in a bowl lightly crush with a fork
  • spoon a third of the ice cream on the cake in the mould drizzle more than a third of the crushed peach mixture and swirl to marble sprinkle with a third of the granola repeat the layering with the remaining ice cream mashed peach mixture and granola
  • top with the remaining cake layer cutting to fit place in the freezer for 4 hours or until set
  • place of the fishing reserve mixture in a small saucepan over low heat stir until hot invert cake onto a serving dish top with peach mixture and extra granola sprinkle with icing sugar
