  • 2 5kg leg of lamb
  • 2 brown onions thinly sliced
  • 1 tablespoon dijon mustard
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon worcestershire sauce
  • 2 3 cup apricot jam
  • 1 4 cup brandy
  • 150g green beans halved lengthways
  • 1 4 cup lemon juice
  • 2 tablespoons extra virgin olive oil
  • 2 gem lettuce leaves separated
  • 1 lebanese cucumber chopped
  • 1 avocado thinly sliced
  • 1 3 cup skinless hazelnuts toasted chopped
  • 1 3 cup golden raisins
  • 2 green onions thinly sliced diagonally
  • 1 1 2 tablespoons finely chopped fresh dill

  • remove lamb from fridge 1 hour before cooking and allow to come to room temperature
  • preheat oven to 200c 180c fan forced place onion in base of a large roasting pan pour over 1 cup water place lamb on top
