Lamb Hot Pot

The ingredient of Lamb Hot Pot

  • olive oil for cooking
  • 1kg diced lamb
  • 1 onion diced
  • 1 garlic clove crushed
  • 1 carrot diced
  • 2 celery sticks diced
  • 1 tablespoon plain flour
  • 750ml massel chicken style liquid stock
  • 400g can chopped tomatoes
  • 1 tablespoon tomato paste
  • 1 tablespoon fresh thyme leaves
  • salt and freshly ground pepper
  • 1kg potatoes
  • 2 tablespoons melted butter

The Instruction of lamb hot pot

  • preheat oven to 180c
  • heat a large heavy based frypan over medium heat add a splash of olive oil and cook lamb in small batches until golden adding more oil if needed set aside lamb in an ovenproof casserole dish
  • add extra oil to pan if needed reduce heat add onion garlic carrot and celery and cook for 5 6 minutes until vegetables soften stirring often sprinkle flour over vegetables and stir in then cook for 3 4 minutes add stock tomatoes tomato paste and thyme bring to the boil reduce heat and simmer for 10 minutes season to taste pour sauce over lamb
  • peel potatoes and slice into rounds arrange the potatoes on top of the lamb melt the butter and brush over the layer of potato place the hot pot into the preheated oven uncovered and cook for 2 1 2 hours brush the potato slices with some of the casserole juices every 1 2 hour serves 4
