Celebration Lamb


A special lamb roast seasoned with garlic and rosemary and sweetened with honey.

The ingredient of Celebration Lamb

  • 2 1 2 kg leg of lamb
  • 4 cloves garlic cut into slivers
  • 1 bunch fresh rosemary
  • 2 tablespoon olive oil
  • 2 tablespoon honey
  • 150g semi dried tomatoes to serve
  • 150g pitted kalamata olives to serve

The Instruction of celebration lamb

  • preheat oven to 180c or 160c fan forced unwrap the lamb leg and pat dry with paper towels use a small sharp knife to make deep cuts into the top surface insert garlic and rosemary sprigs into the cuts place lamb into a roasting dish
  • drizzle lamb with olive oil season with salt and freshly ground black pepper roast for 1hr 45 mins for medium done meat
  • as soon as you take lamb from oven drizzle with honey let stand for 15 mins before slicing serve with combined tomatoes and olives and side dishes
